Bon Appetit: Bread-machine Focaccia


I had a carb-craving this past weekend and decided to indulge in the treat of making homemade Focaccia. That said, I had a lot on my plate and had to opt for a bread-machine version. Despite this minor change, it was delicious and paired perfectly with a certain salad…

Bread Machine Focaccia (12 servings)
1 cup lukewarm water
2 tablespoons olive oil
1/2 teaspoon salt
4 garlic cloves minced
1 tablespoon fresh chopped lemon thyme
3 cups all-purpose flour
1 1/2 teaspoons active dry yeast
3 tablespoons olive oil
2 teaspoons fresh chopped lemon thyme

1. Place the “Bread” ingredients in the bread machine in their listed order. Select Dough cycle; press Start.
2. Remove dough from the bread machine when the cycle is complete. Preheat oven to 400 degrees F.
3. Flatten dough to 1 1/2 cm on a floured cookie sheet. Use your fingers to dimple the dough every inch or so.

4. Brush with remaining olive oil and sprinkle with remaining lemon thyme.



5. Bake in preheated oven for 20 mins or until golden brown.




This crispy bread tastes fabulous drizzled with balsamic, as bruschetta, for a sandwich and in a salad.
