Do you ever get those cravings, where you absolutely need to eat something? Where it isn’t a want, but a true necessity. I had one of those this evening… for Mexican food! So automatically the hunt for tortillas was on, except for we didn’t have any. Then I looked for rice, but yet again nada. Then my mom suggested quinoa and #mindblown. Quinoa is such a delicious and healthy alternative to rice and it was perfect in this dish!
