Kale Lentil Pomegranate Salad.

With volunteering at We Day, exams and my neck giving me all sorts of troubles, this past week has been crazy!  On top of everything, last Monday, October 19, I started a Vegan Month.  And let me say it…  I have now gone 10 days without chocolate and it is EXTREMELY DIFFICULT.  I ate very little meat before this month so the transition in general hasn’t been much different; eggs, chicken and salmon are the only real change, other than my transition to almond milk which I love!  And chocolate…  Still, I’m loving this new lifestyle and the fun recipes that it brings.  Coming soon to Currently Craving, a vegan stew from Deliciously Ella that will have you calling all your foodie friends.  But for now, a simple fall salad with the delicious protein that all vegans and vegetarians need.

Little Blue Box

Last Wednesday was my sweet sixteen and I was shocked, yet thrilled to find myself in the presence of a little blue box.  Not royal blue, nor baby blue or navy blue – tiffany blue.  I’m a true believer in giving memories and although this was a material gift, hearing my mom say that she’s been planning this for three years is going to be something I’ll remember forever.

I also received the vegan Oh She Glows cookbook by Angela Liddon!  I’ve been trying out the recipes and boy will I be sharing some of them on here; so delicious and healthy!
